Dry Facial Skin?

Hi there!

Do you have dry facial skin? If yes, I want to share this Clinique product with you that I have been using for many years (since I was a teenager). I absolutely LOVE this product! If you have dry facial skin you’ll want to own this product. I apply it to my face twice a day – once in the morning and once at night after I’ve washed my face. Cucumber Caprese Salad


This salad is one of my favorites and it’s SOOO easy to make. You’ll only need 4 ingredients:

  • 1 cucumber 
  • 1 package of angel sweet or cherry tomatoes 
  • 1 package (12 oz) of Galbani Mozzarella Fresca marinated mozzarella balls
  • Balsamic vinegar 

Directions: slice up the cucumber, slice the tomatoes in halves or fourths (optional), and slice the mozzarella balls in half (optional). In a medium size bowl mix together the sliced cucumber, tomatoes, and mozzarella balls. Then drizzle with balsamic vinegar and stir.

Serves 4 people.

Sliced Filets with Peppers & Mushrooms

My most favorite dish of my father’s when I was a kid was his sliced filets with peppers and mushrooms. I’m not being biased when I say this…..IT’S ABSOLUTELY DELICIOUS!!

Here’s the recipe:

Ingredients
3 6oz filet mignon
1/4 cup of olive oil
2 cloves of garlic, minced
3 green bell peppers
1/2 lb mushrooms, sliced
1/3 cup of marsala wine
salt, pepper, and oregano

Directions
Slice filets in half lengthwise to make six total slices (I have the butcher shop do this for me). Sprinkle the filets with salt and pepper on both sides. Heat olive oil in large skillet and add the filets. Brown the filets; two minutes per side. Remove the filets to platter. Add to skillet garlic, peppers, and mushrooms. Sprinkle with salt, pepper, and oregano. Saute covered until peppers are tender (about 10 minutes). Re-add filets and marsala wine. Re-heat filets uncovered for about 1 minute per side. Divide onto plates with the juices.

Corn Fritters


I loved when my mother made corn fritters for me as a kid. Here’s how to make this great side dish:

Ingredients:

1 can of cream-style corn
1 egg
1/2 cup plus 2 tbsp. of flour
1/2 tsp. of baking powder
1/2 tsp. of salt
Few grains of paprika

Directions:

Mix above ingredients well. Heat olive oil in a frying pan on medium heat. Drop about 1/4 cup of mixture into frying pan. Cook until delicately brown on both sides. Remove from pan and drain on paper towel. Repeat until mixture is gone.

Yum!

Easy Pizza Quiche

This easy pizza quiche appetizer is so simple and delicious! The kids love it too!

Ingredients:

4 oz of shredded mozzarella cheese
1 large egg
1 cup of milk
3/4 cup of flour
1/2 cup of chopped pepperoni (remove skin)
1/2 tsp of salt
1/2 tsp of oregano
Dash of pepper
Dash of garlic powder
Dash of basil

Directions:

Mix all ingredients in a bowl (except 1 oz of cheese). Pour mix into 9 inch pie plate that has been greased well. Bake at 425 degrees for 25 minutes. Top with 1 oz of cheese and bake 5 minutes longer.

Let cool before slicing.

Enjoy!!

Balsamic Chicken and Asparagus

This balsamic chicken and asparagus recipe is so easy….and healthy!

Ingredients for the chicken breasts
2 lbs of boneless skinless chicken breasts (about 4 pieces)
1/4 cup balsamic vinegar
1 tbsp. olive oil
1/8 tsp. minced garlic
1/8 tsp. pepper
1/2 pinch of salt

Instructions for the chicken breasts
In a small bowl whisk together balsamic vinegar, olive oil, minced garlic, pepper, and salt. Place chicken in a Ziploc bag, pour the bowl of ingredients on top of the chicken and massage with your fingers to coat the chicken. *Marinade the chicken overnight or make as is. Preheat oven to 400 degrees F. Bake for 35 minutes.

Ingredients for the asparagus
2 lbs of fresh asparagus, trimmed
3 tbsp. balsamic vinegar
2 tbsp. olive oil
1/8 tsp. minced garlic
1/8 tsp. pepper
1/2 pinch of salt

Instructions for the asparagus
Preheat oven to 400 degrees F. Place asparagus in a shallow 9×13 baking dish. Sprinkle with balsamic vinegar, oil, minced garlic, pepper, and salt; toss to coat. Bake for 20-25 minutes.

Serve with your favorite side dish and enjoy! (This meal goes great with a glass of white wine!)

What to pack for your child’s baseball game

It’s baseball season! My 4 year old plays Tball and I’ve learned that you must come prepared. Here is a list of items I recommend bringing to your child’s game to make your life easier.

1. Glove, bat, and helmet for your child

2. First aid kit – one that includes ice packs. Kids get hit by flying balls all the time.

3. Wagon – a MUST! Click here

4. Snacks – fruit, crackers, etc.

5. Water (lots of water!) – it gets hot being in the sun so it’s important to stay hydrated.

6. Sunscreen SPF 50 – protect you and your child’s skin from getting sunburnt.

7. Folding chairs – those bleacher seats just aren’t comfortable.

8. Cash for the snack bar – if you feel like indulging in a hot dog or nachos. My son loves grabbing a hot dog after the game.

These are a few items I recommend taking with you. Buying the wagon was a huge life saver. You don’t have to take trips back and fourth to the car to grab your belongings….just throw everything in the wagon! Click here

Easter Eggs

Here is a step by step process to hard boiling your Easter eggs:

1. Place eggs in a saucepan and cover the eggs with about 1-2 inches of cold water.

2. Turn heat on high and let the water come to a rumbling boil.

3. Once the water has come to a boil, turn the heat off and cover the eggs for about 10-12 minutes.

4. Prepare a bowl of ice cold water. Once the eggs are done, place the eggs in the ice water to cool.

5. After the eggs have cooled, place the eggs in covered Tupperware (or back in the egg carton they came in) and place in the fridge. Wait 1-2 hours before decorating.

6. Have fun decorating with the kiddos!

Gel/Shellac Nails

Since experiencing gel/shellac nail polish this past fall, I’ve been completely hooked. I’ll never use regular nail polish again. Gel nail polish doesn’t chip! I’ll go 2-3 weeks before getting my nails done again. And yes, these are my real nails. I’m in love with this dark red color I picked at the salon today.
